I have loved this very interesting cheese since I was a little girl, and am sad that it is increasingly difficult to find, so please keep carrying bierkase! Often maligned because of its odor, its "bark" is worse than its "bite" - it generally has a somewhat intense musty & pungent smell, but its taste is simultaneously buttery, tangy, sweet, nutty, sometimes a tad acidic, milder than its smell might indicate and VERY delicious!! Especially good on pumpernickel crackers or toast.
