Sartori's Asiago is a cheese made in the tradition of Asiago d’Allevo with skimmed cow’s milk. This award winning Wisconsin Asiago Cheese's slow maturation process creates a slightly sharp flavor. This Wisconsin cheese is Aged for at least 5 months it is granular, brittle and intensely flavorful. This mature Asiago is a good grating cheese.
Asiago Cheese, pronounced Ah-see-ah-go, is a traditional farmhouse and creamery hard cheese. Originally made of ewe’s milk, Wisconsin Asiago cheese is now made mostly out of cow’s milk.Wisconsin asiago cheese varies in flavor from mild to sharp, and buttery to nutty, this Wisconsin cheese tastes like a cross between parmesan and sharp white cheddar.

Sartori's Wisconsin Sarvecchio Cheese has a firm, dry, deep golden interior with pronounced caramel aromas. You can see the fine white calcium lactate crystals that are the product of long aging and considered desirable. On the tongue, the cheese is waxy and granular, crumbling rather than dissolving. It finishes with caramel-like sweetness, not because it contains any sugar -- it doesn't -- but because aging has produced amino acids that deliver the perception of sweetness.
Pairings: Try our Sarvecchio with pasta, soups, salads and red wines.
