Picked this up at our local coop. After going nuts eating a slice I have thin sliced this using a mandolin and put it on bake your own pizza from our coop and lately sauteed a few cherry tomatoes and put this cheese into an omelet. The taste was out of this world. The flavor isnt strong as some cheeses, but really distinctive and blends well with eggs. Next I am planning to use it in quiche, I think it would complement the milder ingredients. YUM.
