Le Gruyère AOP is a Swiss cheese, named after the town of Gruyères in Fribourg, Switzerland. This delicious and unique cheese has been traced back to the year 1115, with the production traditions and practices upheld and legally protected to this day. Unpasteurized cow’s milk from the region creates a unique flavor profile, given that these cows graze on grass in the summer and hay in the winter. Le Gruyère is a hard cheese, and is typically aged for six to nine months before being sold. Typically described as aromatic, salty, and strong, this full and fruity cheese is usually found in a traditional fondue.
