Spread throughout is crystallization that can only be found in a fine aged cheese. Those little crunchy bits found on and around aged cheeses (specifically our vintage Cheddar collection) are known as calcium lactate crystals. As the cheese is aged, the protein chain begins to unravel and the little deposits form. These cheese crystals don't just add extra crunch, they indicate that the cheese will have an extremely bold and complex flavor. Without a doubt, this is a cheese to savor. Alto Logo One of the rarest cheeses in the world, this cheese is beyond sharp. Produced at the famed Alto Dairy Cooperative on May 2, 1997 in Vat 9 in Black Creek, Wisconsin. This Cooperative has over 500 member farmers. In 2007, this Black Creek plant was featured on the series Modern Marvels. Alto Dairy Cooperative was sold to Saputo Cheese in 2013

I was disappointed in the crystals, or lack thereof in my piece.I guess I got spoiled by the 30 year old version I had purchased. Loved the flavor, but wouldn't buy it again at that price.

Easily the sharpest flavor I have ever experienced. And truly worth it for the experience. But not something I would need to buy twice. Great blast of flavor, decent crystalization, and surprisingly creamy for it's age. However, age seems to have sapped all depth and nuance from the flavor profile - it offers an intense blast of sharpness, with nothing behind it but more sharpness.

My thoughts on this cheese

I ordered the 200.00 a pound cheese with joy and anticipation. I know it is not easy to keep perishables cold, but 3 standard ice bags were not appropriate for 20 year old cheese. The cheese was very moist and slimy in the little packets that seem to have been pre made. I was also hoping to taste the crunchy bits inside older cheese, but didn't. The cheese was nice and sharp, did have a lingering after taste. All in all, I'm glad I tried it, but would be equally happy with a less expensive cheese. I would not buy it again. I think buying it at the store would be wise. Or package it so it stays cold.
