Spread throughout is crystallization that can only be found in a fine aged cheese. Those little crunchy bits found on and around aged cheeses (specifically our vintage Cheddar collection) are known as calcium lactate crystals. As the cheese is aged, the protein chain begins to unravel and the little deposits form. These cheese crystals don't just add extra crunch, they indicate that the cheese will have an extremely bold and complex flavor. Without a doubt, this is a cheese to savor. Alto Logo One of the rarest cheeses in the world, this cheese is beyond sharp. Produced at the famed Alto Dairy Cooperative on May 2, 1997 in Vat 9 in Black Creek, Wisconsin. This Cooperative has over 500 member farmers. In 2007, this Black Creek plant was featured on the series Modern Marvels. Alto Dairy Cooperative was sold to Saputo Cheese in 2013

Should be better.

The quarter pound chunk I purchased with my order was from the top of the cheese block . It is about 1-inch thick by 4 inches tall and wide. The top of the cheese is un-eatable from the brine that forms on the outside of the cheese. This makes 3 out of my last 5 orders for the really aged cheese extremely disappointing. I love the really matured cheddar cheeses for almost 20 years now, but when I have to slice off 1/4 inch of this cheese and throw it away, that's wasteful and not good business. I hope this gets corrected soon!

the 12 year cheddar is better

Don't waste your money . The 12 year cheddar is better than the 19 year old . Very dissapointed . Have always enjoyed Wisconsin Cheese Marts products until now . The 16 year cheddar was FAR better also . Don't bother looking for that . I got the LAST 1/2 pound . YUMMMMMMMM
