Spread throughout is crystallization that can only be found in a fine aged cheese. Those little crunchy bits found on and around aged cheeses (specifically our vintage Cheddar collection) are known as calcium lactate crystals. As the cheese is aged, the protein chain begins to unravel and the little deposits form. These cheese crystals don't just add extra crunch, they indicate that the cheese will have an extremely bold and complex flavor. Without a doubt, this is a cheese to savor. Alto Logo One of the rarest cheeses in the world, this cheese is beyond sharp. Produced at the famed Alto Dairy Cooperative on May 2, 1997 in Vat 9 in Black Creek, Wisconsin. This Cooperative has over 500 member farmers. In 2007, this Black Creek plant was featured on the series Modern Marvels. Alto Dairy Cooperative was sold to Saputo Cheese in 2013

Horrible mushy mess

I've purchased quite a few of the very aged cheddar from this site and have always enjoyed them. This however was disgusting. The cheese arrived with the outer inch white and mushy. When we opened the package it was very wet and smelled rancid. My friend was bold enough to taste it anyway and he almost gagged. Maybe I got a bad shipment or maybe 22 years is too much for Wisconsin Cheese Mart. Don't waste your money on this.

I was disappointed in the crystals, or lack thereof in my piece.I guess I got spoiled by the 30 year old version I had purchased. Loved the flavor, but wouldn't buy it again at that price.

Easily the sharpest flavor I have ever experienced. And truly worth it for the experience. But not something I would need to buy twice. Great blast of flavor, decent crystalization, and surprisingly creamy for it's age. However, age seems to have sapped all depth and nuance from the flavor profile - it offers an intense blast of sharpness, with nothing behind it but more sharpness.
