Wisconsin original cheese! The first Colby was made in 1874 in Colby, Wisconsin. The cheese was named after the village. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made the same way as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar. The distinctly mild flavor makes it ideal for grilled Cheese sandwiches.

Nice Mild Cheese

I've had this Colby Cheese before and really loved it so I ordered more in my latest order. I know it has to be the same cheese but for some reason this latest order which I ordered 2 lbs. seemed to be a little bit milder and not as sharp as the original one I had. My original Colby from this store was just a smaller block from a basket of different cheeses but I wouldn't think that should make a difference. In any event, this Colby cheese is still very nice and I do like it a lot but it could be just a tad sharper.

I received my shipment and noticed the lid was cracked. The inside of the box was very warm. It looked like all the oils had been cooked out of the cheese. The edges of the cheese looked a little darker than the rest of the cheese and was harder to bite after being refrigerated. The cheese seemed to have lost all it's flavor. I now have 6 & 1/2 lbs of flavorless cheese. Jerry Pierce
