A Wisconsin original cheese! The first Colby was made in 1874 in Colby, Wisconsin. The cheese was named after the village. This premium Wisconsin Colby cheese from Henning's is wrapped in cheese cloth (similiar to gauze bandage) and air cured, allowing the cheese to age more rapidly. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made the same way as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar.
