Unlike its grocery store cousin this string cheese is made the old fashioned way. First it's kneaded like salt water taffy, extruded into rope and then most importantly soaked in brine (salt water) to dry it and give it a salty taste.

This is a popular snack cheese. It is a favorite with children because it is fun to pull apart the strings that make up the rod shapes so they can be eaten individually. For those on a low-sodium diet, soaking string cheese in water will remove some of the salt content. Like many semi-soft cheeses, it can be kept refrigerated for up to two weeks.

This product is extremely perishable. If you ship outside the 2 day�ground shipping area, you must ship air.

Perfection.

I've been a string cheese snob since the mid '70s when we teenagers would ride our bikes 45 minutes to Lone Elm Cheese. That was a tiny cheese factory at the intersection of two county roads. The thick string cheese was often still warm and despite plenty of salt brine on the outside, it was quite dry inside. When peeled open it looked like asbestos threads which increase the surface area and flavor. No other string cheese came close until I found Vern's at the Wisconsin Cheese Mart!
