The process of making Wisconsin Brick cheese is similar to white American Cheddar, but cultured at a slightly higher temperature, resulting in a slightly softer texture, higher fat content, and a slightly altered protein structure. The name is derived not only from its brick shape, but the clay-fired bricks with which the curds are pressed. This particular Wisconsin brick cheese is mild, smooth, with a semi-soft texture and the addition of zesty garlic. Each block of Decatur Brick cheese is 8 ounces.
