Spread throughout is crystallization that can only be found in a fine aged cheese. Those little crunchy bits found on and around aged cheeses (specifically our vintage Cheddar collection) are known as calcium lactate crystals. As the cheese is aged, the protein chain begins to unravel and the little deposits form. These cheese crystals don't just add extra crunch, they indicate that the cheese will have an extremely bold and complex flavor. Without a doubt, this is a cheese to savor.
One of the rarest cheeses in the world, this cheese is beyond sharp. Produced at the famed Alto Dairy Cooperative on May 2, 1997 in Vat 9 in Black Creek, Wisconsin. This Cooperative has over 500 member farmers. In 2007, this Black Creek plant was featured on the series Modern Marvels. Alto Dairy Cooperative was sold to Saputo Cheese in 2013
