Cotija cheese is a Hispanic-style cheese with a hard, crumbly texture made from cow's milk.  Cotija cheese is reminiscent of feta cheese in its salty flavor and crumbly texture.  However, Cotija's longer aging process gives it a harder, drier, and more crumbly texture than feta.  Cotija cheese does not melt, but makes a wonderful addition to salads, soups, casseroles, tacos, and chili.  Simply crumble or grate the Cotija cheese on top of your favorite dish for a cheesy, salty kick.
