A northern Italian style cheese, Fontina Fontal is a delicious addition to any cheese board or grilled cheese. Fontina itself has been created in the Italian Alps since the 12th century. It has PDO status in Europe, but also has many production variations from other European countries as well as the United States. Fontina cheese produced in the Aosta Valley in Italy must be made using unpasteurized milk for one single milking. Fontal describes the nature of this fontina style cheese, being that it is a young variety and quite creamy. The cheese is mild and sweet, with a creamy nuttiness that only intensifies as it ages. The cheese’s overall flavor is experienced through it’s semi-soft texture, that will melt in your mouth and incorporate easily into a variety of cooking applications. Noted for an earthy, woody taste, this cheese pairs well with roasted meats and salamis and a nice French rosé. This eight ounce piece of cheese will last well in the refrigerator, kept in an airtight package. But you won’t need to keep it for that long, it’ll be gone before you know it!
