Le' Bec cheese is a soft, surface ripened cheese. Le' Bec cheese has a washed rind and is lightly smoked, foiled cheese, similar in flavor to Limburger, German Brick, or Beerkaese.   Le' Bec boasts a mild, buttery, slightly salty flavor, with hints of natural smoke.  This cheese is a good alternative for those who want a cheese similar to Limburger, but with less of that stinky aroma.  Made only by Chalet Cheese in Monroe, Wisconsin  - the last Limburger cheese plant in the United States.
