Little Mountain is a traditional washed rind Alpine cheese. Alpine-style cheeses are any cheeses that resemble the classic mountain cheeses made in the Swiss, Austrian, French, or Italian Alps. Typically Alpine-style cheeses are semi-firm to hard made from cow's milk with a little salt, and produced into wheels. Little Mountain is designed to be most similar to Appenzeller, an alpine cheese produced in Switzerland for over 700 years. Little Mountain cheese is distinguished by a sweet, slightly fruity flavor with Swiss nutty overtones. It is made with raw cow's milk and aged at least 6 months.
