Roquefort is a popular French blue cheese, well balanced and renowned for its aroma and flavor.  Roquefort was the first cheese to be given the AO distinction, later known as the AOC and eventually P.D.O. (Protected Designation of Origin).  These labels guarantee the cheese’s particular characteristics, and result in a consistent, traditional, and unique production of one of the “King of Cheeses”.  Roquefort is a sheep’s milk cheese, and only cheeses aged in the natural Combalou caves of Roquefort-sur-Soulzon may bear the name Roquefort.  The cheese is white with blue and green veins throughout.  The flavor of the cheese is creamy, complex, with a sharpness and tangy nuances.  The body of the cheese is creamy and soft, with a crumbly nature making it the perfect choice for salads.  Each package contains 3.5oz of Roquefort cheese.
