Fresh Berry Bruschetta

Looking to upgrade your brunch menu? Fresh Berry Bruschetta is the ultimate spring appetizer. By pairing the bold, sophisticated tang of Wisconsin Gorgonzola with the sweet, juicy burst of seasonal blackberries and strawberries, you create a bite that is as vibrant as it is delicious. Finished with a touch of fresh mint and balsamic glaze, it’s a quick, elegant way to impress your guests - or to treat yourself to a little taste of luxury this weekend.

Ingredients:

  • 1 cup halved fresh blackberries
  • 1 cup sliced fresh strawberries
  • 1/2 cup chopped fresh mint
  • 1 tablespoon balsamic glaze
  • 1 cup crumbled Gorgonzola, 5oz
  • 24 slices toasted French bread baguette or crostini

Instructions:

1. Toss the berries, mint and balsamic glaze in a medium bowl. Gently fold in gorgonzola.  
2. Top each toast with about 1 tablespoon berry mixture.
