Brick cheese is a Wisconsin original cheese. John Jossi, a Swiss-born American cheese maker, invented it in 1877. He taught the recipe for Brick cheese to a dozen other Wisconsin dairies, and it was later sold to Kraft. Although many variations of Brick cheese are made today, only a small percentage of it is authentic, with a distinct, traditional flavor. Original Wisconsin Brick cheese is smear-ripened to develop a full, earthy flavor with maturity. This Wisconsin Mild Brick cheese is a young version of the authentic, cellar-ripened brick. The flavor is mild and sweet, which makes it an extremely versatile cheese. The texture is rich and creamy, and this Brick cheese melts beautifully. Like no other!

I'm originally from the Midwest and I grew up on Brick cheese. It's always been one of my favorites, but this one tops them all! Absolutely wonderful! I smell, taste, and look is outstanding and everyone who tasted it loved it from the start! Many of them were long time Brick cheese fans so winning them over to this Brick cheese was quite an accomplishment. Thanks for a fantastic cheese, keep up the good work!

Our tastes are all different. I like a stronger flavor. I know people who would love this. Texture was good. I tried this because I was not familiar with it. I will try something stronger the next time I order.

Very good! My wife has never had it before, she really likes it too. I don't know of any place where I live in SoCal to get Brick cheese, so glad I found a store to order it from. I grew up in WI but moved out west in '72, there is nothing as good as Wisconsin cheese out here that I know of.
