Don't let the name fool you - while Bierkäse literally translates to "beer cheese," there isn’t actually any beer in the recipe. This iconic German-style cheese earned its title through centuries of tradition as the ultimate companion to a cold pint. Today, it has found a second home in the heart of the Midwest, becoming a top-tier favorite among Wisconsin cheesemakers.
What truly defines Bierkäse is its traditional production method. The cheese is crafted using a specialized smear to surface-ripen the wheel, a process that enhances its signature tangy flavor and creamy profile as it ages. Much like its cousin, Limburger, Bierkäse ripens for seven or more months in highly humid conditions, developing a boldly pungent aroma and a distinctly robust character.
