Cauliflower is such a versatile vegetable! You can roast it, boil it, and even mash it. This easy cauliflower mash makes for a healthier replacement for mashed potatoes, and with its addition of Wisconsin cheese, you won't miss the potatoes one bit! Serve with chicken, pork, steak, or use as a Thanksgiving side.
Ingredients
- 2 packages (10oz each) frozen cauliflower
- 1/2 cup milk
- 4 ounces cream cheese
- 4 ounces Parmesan, grated
- Salt and pepper to taste
Instructions
1. Bring cauliflower and milk just to a boil in a large saucepan, covered, over medium-high heat. Reduce heat; simmer, covered, for 10-12 minutes or until tender, stirring occasionally. Allow to cool slightly. |
2. Transfer cauliflower mixture to a food processor. Add cream cheese and Parmesan; cover and process until mixture is smooth. Season with salt and pepper to taste. |
