Parmesan Roasted Pumpkin Seed Snack Mix

This delicious snack mix is perfect for on the go!  The combination of freshly roasted pumpkin seeds, dark chocolate, dried fruit, coconut, and cheese creates a unique trail mix unlike any kind you will find in the grocery store.  This snack mix is fun to prepare, and great for all ages.  Get in the fall spirit with Parmesan Roasted Pumpkin Seed Snack Mix!


  • 1 Carving Pumpkin (5-7 pounds)
  • 2 tablespoons olive oil
  • 2 ounces Parmesan cheese, grated
  • 1/2 teaspoon each salt and pepper
  • 1 cup unsweetened coconut flakes
  • 1 cup dark chocolate chunks
  • 3/4 cup dried cranberries
  • 2 ounces Parmesan cheese, diced  


1. Heat oven to 300 degrees Fahrenheit
2. Remove top of pumpkin.  Scrap top and sides of pumpkin, removing seeds and fibers.  Place seeds in bowl of water, then drain on paper towels.  Pat dry.  Transfer dried seeds to greased 15 x 10 inch baking pan.  Bake for 30 minutes, stirring occasionally.  For added fun: carve your pumpkin while the seeds bake!
3. Remove pan from oven and drizzle seeds with olive oil.  Sprinkle with grated Parmesan, salt and pepper; toss to coat.  Continue baking for 10-12 minutes or until light brown.  Cool completely on wire rack.
4. Combine the remaining ingredients with the pumpkin seeds in a large bowl.
