Ingredients:

  • 1 package (1/4 ounce) active dry yeast (2 1/4 teaspoons)
  • 2 tablespoons brown sugar
  • 1 1/2 cups warm water (approximately 110 degrees F)
  • 4 1/2 to 5 cups all-purpose flour, divided'
  • 1 1/2 teaspoons sea salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 36 slices pepperoni, diced
  • 1 pound (16 ounces) Mozzarella cheese, cut into 36 cubes
  • 1 1/2 ounces Parmesan cheese, grated (1/2 cup)
  • 3 quarts water
  • 2/3 cup baking soda
  • 1 large egg, lightly beaten
  • Coarse sea salt
  • Marinara sauce, warmed

Instructions:

1.  Heat oven to 450°F. Line rimmed baking sheets with parchment paper.
2. Dissolve yeast and brown sugar in warm water in the bowl of a stand mixer. Let stand for 5-6 minutes or until foamy.
3. Add 4 1/2 cups flour and salt; beat on low speed until mixture is combined. Add butter. Beat on medium speed until dough begins to pull away from sides of bowl. Add remaining flour, a tablespoon at a time, until a soft dough forms. Remove dough from bowl. Shape into a ball.
4. Divide dough into 36 equal pieces; roll into balls. Flatten balls into disks. Place a diced pepperoni and a mozzarella cube into center of each; sprinkle with parmesan. Seal dough around filling; roll into balls.
5. Bring water and baking soda to a boil in a Dutch oven over high heat, stirring occasionally. Drop balls, a few at a time, into boiling water. Boil for 30 seconds, submerging balls in boiling water. Remove with a slotted spoon; drain on paper towels.
6. Place balls 1 inch apart on prepared pans; brush with egg. Sprinkle with salt. Bake for 8-10 minutes or until golden brown.
7. Serve warm with marinara sauce.
