Wisconsin Cheddar is known for its trademark yellow color, as the cheese is colored with annatto (a natural dye). This Wisconsin colored Cheddar has been aged for at least one year, giving it a nice smooth texture and sharp flavor. As cheddar ages it loses its smooth, firm texture and becomes more granular and crumbly, making it perfect for sandwiches, casseroles and Mac N Cheese.
