Coalho is a firm but lightweight Brazilian-style grilling cheese made by Clock Shadow Creamery in Milwaukee, Wisconsin. Also known as rennet cheese, or curd cheese, this Wisconsin cheese is fresh, made from pressed curd. The cheese tends to have a salty flavor, with a slightly acidic taste. Coalho cheese has an almost squeaky texture when bitten into, with a firm, elastic, and springy texture. This half-pound block of Wisconsin cheese can be cut into strips and should be grilled or warmed before enjoying. Traditionally, Coalho cheese is cooked over a charcoal grill, often with a sprinkling of seasoning or with sauce on the side.
