Also known as rennet cheese, or curd cheese, this Wisconsin cheese is fresh, made from pressed curd. The cheese tends to have a salty flavor, with a slightly acidic taste. Coalho cheese has an almost squeaky texture when bitten into, with a firm, elastic, and springy texture. This half-pound block of Wisconsin cheese can be cut into strips and should be grilled or warmed before enjoying.
