The process of making Wisconsin Brick cheese is similar to white American Cheddar, but cultured at a slightly higher temperature, resulting in a slightly softer texture, higher fat content, and a slightly altered protein structure. The name is derived not only from its brick shape, but the clay-fired bricks with which the curds are pressed. Brick cheese is commonly found on Detroit style pizza!
