In ancient times, underground caves provided the ideal environment for aging cheese. In more modern times, these natural caves are harder to come by, so many cave-aged cheeses are aged in man-made caves dug out of the ground. Cheesemakers re-create the environment in these natural caves. The result of a cheese aged in an open-air cave is a distinctive rind where natural molds flourish and add character to the cheese. Snow White Goat Cheddar Cheese is a creamy goat’s milk Cheddar, clothbound and cave aged for 6 months. Snow White Cheddar is bandage wrapped before aging, allowing the complex, earthy flavors that evolve from cave aging to permeate the cheese. The end result is a deep, complex flavor with pleasant earthy tones.

Snow White Goat Cheddar is made by Carr Valley Cheese Company, which is over one-hundred years old, located in central Wisconsin. Best known for producing high-quality, artisanal aged Cheddars, Carr Valley Cheese is famous for making cheese the old-fashioned way, by hand!
