A Wisconsin original cheese! The first Colby was made in 1885 in Colby, Wisconsin and named after the village. Once this premium Wisconsin Colby cheese from Henning's Creamery is made, it is wrapped in cheese cloth (similar to gauze bandage) and air cured, allowing the cheese to age more rapidly, giving it a more robust flavor. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made with the same process as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar. The mild, creamy flavor makes it ideal for grilled Cheese sandwiches. Produced by Henning's Creamery in Kiel, WI.
