Pecorino Romano is a sheep's milk cheese mainly produced in Sardinia. One of Italy's oldest cheeses, Pecorino Romano was a staple in the diet for ancient Roman legionaries. Distinctively aromatic, pleasantly sharp and quite salty, Pecorino Romano is most often grated over pasta dishes with flavorful sauce. Pecorino Romano is aged at least five months so it is hard and very crumbly. Authentic Pecorino Romano has PDO status under European law and is not to be confused with "Romano cheese", an American adaptation made with cow's milk.  Our Pecorino Romano is made by Locatelli, and is considered to be one of the finest Pecorino Romano's available.  This Pecorino Romano is hand-crafted from pure sheep's milk.  This cheese is aged over nine months at a minimum, leading to an aged, spicy and sharp, dry cheese perfect for grating.
