Collection: Cheddar

Cheddar cheese is the most widely purchased and eaten cheese in the world.  It originates from the village of Cheddar in Somerset, south west England.  Now, cheddar cheese is produced worldwide.  Although Cheddar production began in New York in the United States, today, Wisconsin produces the most cheddar cheese of all states.

During the cheesemaking process, after the curds are heated, they are cut, stacked, then periodically turned and re-stacked.  This process is called Cheddaring and helps acidify the curds and draw out more whey.  This process allows Cheddar to last a long time and gives the cheese its dense, layered texture.

The older the cheddar, the sharper the flavor. Many people will agree that cheddar gets better with age - try some of our aged cheddar cheeses to find out for yourself!  With over 50 types of Wisconsin Cheddar, we have something for every palate, whether you prefer sharp, mild, or something in between.
